INGREDIENTS :
- 3 ripe bananas
- 150 g (3/4 cup) brown sugar
- 2 eggs
- 100 g (1/2 cup) melted butter
- 1 tsp vanilla extract
- 200 g (1 ½ cups) all-purpose flour
- 1 tsp baking soda
- 1/2 tsp salt
- 100 g (about 1 cup) pecans
- 50 g (1/4 cup) dark chocolate chips (optional)
- 2 tbsp honey or maple syrup
HOW TO MAKE A CARAMELIZED PECAN BANANA BREAD ?
- Preheat the Oven: Preheat your oven to 180°C (350°F). Grease a loaf pan.
- Prepare the Pecans: In a small skillet, melt a little butter and add the pecans with 2 tablespoons of sugar. Cook over medium heat, stirring, until they are golden and caramelized. Remove from heat and let them cool.
- Mix Wet Ingredients: In a large bowl, mash the bananas with a fork. Add the brown sugar, eggs, melted butter, and vanilla extract. Mix well until combined.
- Combine Dry Ingredients: In another bowl, whisk together the flour, baking soda, and salt. Gradually add this mixture to the wet ingredients, stirring gently until just combined.
- Add Pecans and Chocolate: Fold in the caramelized pecans and chocolate chips (if using) until evenly distributed.
- Bake: Pour the batter into the prepared loaf pan and bake for 50 to 60 minutes, or until a knife inserted in the center comes out clean.
